Just around the corner from our Graven café, Borggade is where our baking in Aarhus has found a home of its own. Rooted in our early years in the Latin Quarter, it is now part of an ongoing exchange between our bakery teams around the world.

From Graven to Borggade
Our baking began in the basement beneath our Graven café. Moving to Borggade gave the team room to grow, with dedicated spaces for sourdough and pastry production.
An open bakery
Glass partitions connect the bakery to the shop, bringing the daily work of our bakers into view. Guests can follow the shaping of bread and preparation of pastries, seeing the care behind what reaches the counter.

Bread and pastry
Our baking began in Aarhus and continues to evolve through the exchange between our bakeries around the world. Our teams share techniques, develop recipes together and learn from the ingredients and baking traditions around them. These encounters bring distinct breads and pastries to our counters, carrying ideas from one city to another.
We seek close relationships with millers, farmers and producers, letting the character of their flour, grains and fruit guide what we bake.
